Sov'Ran is owned by a company called Divergent Drinks, established in 2016 with a mission to create UK based drinks which break the mould. Sov'Ran is the wine-wing of the business and focuses on using UK-grown grapes from some exceptional, but lesser known, vineyards. Imperial Cuvée 2019 is made from a blend of Pinot Noir and Chardonnay, grown in the chalky soils of Kent. Whilst traditional Champagne grapes, the wine has been made more like a Prosecco (with the second fermentation happening in tank, not bottle). However, the wine was then aged on its lees for 25 months to enhance the creaminess; so the result is somewhere halfway between a Champagne and a Prosecco. Super zesty, expressive, vibrant - it's an awesome new style of English Sparkling Wine.
